It all started at about age seven eating corn on the cob from Young’s Farm in Brookville, Long Island. We picked the corn and 30 minutes later it emerged from a well worn pot of boiling water. We didn’t use any butter, salt or pepper and it was the moment I appreciated an ingredient, its simple beauty and the power of its origin. Similar to a first kiss, the magic and emotion lives within me.
The love affair with food and the community that it became for me, led to becoming a chef. I’ve always felt that the food I would prepare should reflect in some way, that first memory of pure flavor and being. Our heritage as farmers and artisans is challenged, yet there exists a passionate family who are true to both professions.
